Hey there Kenarry Readers! St. Patrick’s Day is next month which means it is just about time to start thinking GREEN. Trish here, and I am indeed thinking green. A little fact about me: I have been known to go a bit overboard when it comes to March 17th.

Leprechaun Chow

I will neither confirm nor deny the Irish luck that may come from enjoying a little Leprechaun Chow. Just as I will not say whether or not this delicious St. Patrick’s Day treat will attract actual Leprechauns. What I will tell you is that you really can’t go wrong by making Leprechaun Chow. It is yummy, it is green and it only requires five ingredients.

The full directions are in the recipe card below, but here are a few tips you may find helpful in making the Leprechaun Chow.

  • Make sure to use an extra large mixing bowl for the cereal. The last thing you want is for all the tasty mix to be spilling out while you mix it.
  • If it turns out that your Leprechaun Chow St. Patrick’s Day Green Treat is a little too sweet just mix in a couple cups of pretzels for the perfect combination of sweet and salty. YUM!!

Leprechaun Chow St. Patrick’s Day Green Treat Recipe

Lucky Leprechaun Chow is an easy St. Patrick's Day recipe. It is yummy, it is green and it only requires five ingredients, so it's a must make for March 17th.

Ingredients

  • 4 cups powdered sugar
  • 1 1/2 cups white chocolate chips
  • green food coloring
  • 1 can vanilla frosting
  • 12 cups Chex cereal

Instructions

  • Pour the cereal into an extra large bowl then set it aside.
  • Add frosting to a microwave safe dish then heat in the microwave for 30 seconds, stir frosting until it is smooth (you may need to add another 30 seconds if not completely melted).
  • Heat the white chocolate chips in another microwave safe dish for 45 seconds to one minute. Stir the chips to ensure they are all melted and chocolate is smooth.
  • After both the frosting and white chocolate chips are melted, mix them together with a few drops of green food coloring. (Add food coloring to deepen the color or green desired.)
  • Pour the creamy green mixture over the large bowl of cereal, mix it until all of the cereal squares are covered.
  • Pour powdered sugar into a large plastic resealable bag. In addition, when the Leprechaun Chow is well combined add it to the resealable bag. (I use the 2.5 gallon size.)
  • Seal the bag and gently shake it until the powdered sugar covers all of the cereal.
