Peanut Brittle is a Thanksgiving and Christmas favorite at our house. Along with being a fan of the crunchy classic, I happen to be a huge fan of microwave recipes.
How to Make this Easy Peanut Brittle Recipe in the Microwave
Believe it or not you can make crunchy Peanut Brittle in the microwave in just a few minutes. No candy thermometer required and above all, this simple and speedy holiday treat allows more family time outside of the kitchen.

Kitchen Tools Needed:
Ingredients Needed:
- 1 cup Sugar
- 1/2 cup Corn Syrup
- 1 1/2 cup Peanuts
- 1 tablespoon Butter, plus enough to grease a baking sheet
- 1 teaspoon Vanilla
- 1 teaspoon Baking Soda
Instructions:
1. Prepare
First, prepare a baking sheet with a layer of aluminum foil followed by a layer of butter. Simply smear the butter over the foil then set the pan aside. Then spray a layer of cooking spray on the inside of a microwave safe bowl.
2. Create Mixture
Next, add the sugar, syrup and salt to the prepared bowl and stir until well combined.
3. Microwave & Mix
Place the bowl in the microwave then heat the mixture on high for four minutes. Next, carefully remove the bowl from the microwave, add peanuts to the peanut brittle mixture and fold with a spoon or spatula until the peanuts are covered.
Return the bowl to the microwave then microwave on high for two minutes. Once again, carefully remove the bowl from the microwave and stir the mixture well. Then return the bowl to the microwave for a third time and heat this easy peanut brittle for one minute.
Next stir the mixture then heat in the microwave on high for a final 30 seconds. (Consequently the microwave times are as follows: 4 minutes, 2 minutes, 1 minute then 30 seconds.)
4. Final Ingredients
Finally, add butter, vanilla and baking soda to the peanut mixture then stir the peanut brittle mixture until it has a foam like consistency. Then spread mixture onto the buttered baking sheet.
5. Cool & Enjoy
Allow Peanut Brittle to harden for one hour before breaking it into serving size pieces and enjoy!
