Cheesy Chili Noodles: One Pot Dinner Idea

Cheesy Chili Noodles are a one-pan dinner that is an easy go-to meal and can be made in less than 30 minutes! Using many pantry staples, you will have dinner on the table fast with this meal!
Hi everyone! Amanda here from Old House to New Home, sharing one of my go-to dinner recipes using ground beef, Cheesy Chili Noodles! It is like chili and macaroni and cheese had a baby and it is oh so good!
My kids call these taco noodles, which is an accurate name as well, but with the addition of the kidney beans, I think it makes the recipe taste more chili like! If you don’t like beans, you could certainly leave them out, or if you are looking for a vegetarian recipe, keep the kidney beans and swap out the ground beef for black beans!
Can you freeze Cheesy Chili Noodles?
While you technically could freeze this meal, I don’t think that defrosted noodles taste as good as fresh. That being said, if you have leftovers, they reheat fabulously for up to two days. My husband loves taking this meal as leftovers to work for lunch!
I love this meal because it can be easily customized. Switch out the cheese for your favorite, swap in your favorite type of bean, add taco sauce, hot sauce, or jalapeños! You can even mix up the garnishes. We love corn chips and sour cream on top of our cheesy chili noodles!

Ingredients Needed:
- 1 lb. ground beef
- 1/2 onion, diced
- 1/2 pepper, diced
- 1 cup salsa
- 2 8 oz. cans tomato sauce
- 1 can kidney beans
- 3 tbsp. chili seasoning
- 2 tsp. cumin
- salt and pepper to taste
- 1 1/2 cups shredded cheese
- garnish options: additional cheese, green onion, tortilla strips, hot sauce
- 1/2 lb. elbow pasta or shell pasta
- 1 cup water
Instructions:
1. Cook ground beef
Add ground beef, pepper, onion, and seasonings to the pan. Cook until browned.
2. Add Beans and Tomato Sauce
Add the salsa, tomato sauce, and beans. Stir in the pasta and cook until noodles are tender.
3. Add Noodles and let Cook until Tender
Add the pasta and stir well. Cook until tender. Add more water or liquids as needed to keep pasta submerged.

- Chef's Knife
- Spatula
- Heavy Bottomed Non-stick Ceramic Pan
Ingredients
- 1 lb ground beef
- 1/2 onion diced
- 1/2 pepper diced
- 1 cup salsa
- 2 8 oz cans tomato sauce
- 1 can kidney beans drained and rinsed
- 3 tbsp chili seasoning
- 2 tsp cumin
- salt and pepper to taste
- 1 1/2 cups shredded cheese
- garnishes, additional cheese, green onion, tortilla strips, hot sauce
- 1/2 lb elbow pasta or shell pasta
- 1 cup water
Instructions
- Add ground beef to a preheated nonstick pan. Add the pepper and onion and cook until ground beef is browned.
- Add salsa, tomato sauce, kidney beans, and seasonings. Stir well.
- Add the pasta and stir well. Make sure all the noodles are covered by liquid. If they are not covered, add additional salsa, tomato sauce, or water. Cook uncovered, stirring occasionally to prevent sticking. Add water as needed to keep noodles submerged. Let cook for 10-12 minutes, or until noodles are tender.
- Add cheese and stir well. Serve immediately with garnishes.
